- 1 pound halibut fillets- skinned and cut into 4 pieces approximately 1 inch thick
- 1 lemon- peel and juice
- Salt and white pepper
- 1-2 T olive oil
- 4 pieces prosciutto- Proscuitto di Parma is the best if available
- 1-2 T flavored to drizzle over top- ex- chili garlic oil, basil oil, or your favorite
Preheat oven to 450-500 degrees. Use middle rack
To prepare the halibut: Wash and remove skin from halibut. Cut into 4-6 ounce serving pieces. Be sure to thoroughly pat dry the halibut. Salt and pepper the fillets and drizzle each fillet with the lemon zest, juice, and olive oil. Let set for 20 minutes.
Before placing in the preheated oven, wrap each fillet in 1 slice of prosciutto. Place the cut edges on the bottom to seal. Place a rack on a sheet pan (if you don’t have a rack, just use a sheet pan) and preheat the pan in the hot oven for 5 minutes or so. When the pan is hot, place the fillets on the pan and return to the oven for 5-7 minutes depending on the thickness of the fillets. Check for doneness by checking the center of a fillet, it should be not quite opaque. If done, remove from oven and lightly cover with foil for 5 minutes to continue cooking with the residual heat. If not done, return to oven for 1-2 minutes more and then recheck. Drizzle with the flavored oil and serve immediately.
