Green Curry Halibut

Green Curry Halibut: 3-4 servings


  • 1 pound halibut fillets- skinned and cut into 3/4-1 inch cubes
  • 1 small zucchini and 1 small yellow squash- cut into bite sized pieces
  • 2-3 T green curry paste
  • 1 13.5 oz can unsweetened coconut milk- regular or low fat
  • 1/2 cup water
  • 1 T fish sauce
  • 1 tsp brown or palm sugar
  • zest of 1 lime if desired

Put 1/2 the coconut milk in a medium saucepan and bring to gentle boil over medium heat.  Add the green curry paste and cook for 2-3 minutes until becomes slightly thick and fragrant.  Add zucchini and yellow squash, the remaining coconut milk, water, sugar, and fish sauce.  Simmer until vegetables are almost cooked and add halibut cubes- cook until just done- about 2 minutes.  Off heat and sprinkle with lime zest and can garnish with basil if desired

Serve with steamed jasmine or brown rice,  Roasted eggplant lettuce cups were also nice as a side dish.
