Orange Halibut- 2 servings
- 1 pound of halibut- cut into serving size fillets
- 3 medium oranges- zested and juiced- approximately 1/2 cup total
- flour- salt and pepper
- 2 T room temp butter
- 2 T olive oil
Season the halibut with salt and pepper. Dredge it lightly in the flour (salt and pepper the flour) and shake off excess. Heat the oil in medium saucepan over medium high heat and add the fillets flesh side down. Cook 3-4 minutes and turn only once- finish cooking until done- opaque. Watch closely and don’t overcook!
Pour off oil and wipe out pan- return to heat and pour in orange juice/zest mixture. Let it reduce for 2 minutes then remove from heat and swirl in butter 1 T at a time. Salt and pepper sauce and spoon over fish- serve immediately.
Cooked orzo or rice to absorb the orange sauce
